Using the "Safe Zone" method, just add your smoke pack to one side of the charcoal, just like the picture. This effectively creates a 3 stage heat zone on the grill. The spot over the coals is High, the spot over the foil is Med, and the "Safe Zone" is Low. Put the smaller pieces of meat over the Med Zone and keep the bigger stuff on the Hot area to make sure everything cooks at the same time.
