Steakhouse Quality Steak at Home

1 steak
Kosher Salt
Fresh Cracked Telicherry Black Pepper
Vegetable Oil

Let the steak sit out until it is at room temp(never cook a steak cold). Cover heavily with Kosher Salt and Fresh Cracked Pepper, DO NOT USE PRE-GROUND PEPPER! Oil really well.

Fill your charcoal chimney about half way full. Let the coals get white hot. Let the chimney get hot on the grill like in the picture. Set the steak on the grill and then set the chimney over the top.
Cook on each side about 3-5 min depending on the thickness of your steak. Let rest for about 3 min and serve(always let your meat rest after cooking, never cut into it right away. People always cut into the meat right away and say "Look at all that juice". Guess what, it has all run out of the meat and on the plate, it will be dry). The underside of the chimney can reach almost 1200 degrees which rivals even the best quality salamanders at World Class steak houses, Enjoy!
